Decadent Carob Summer Balls

Hot weather arrived to Chicago so it's time to please the sweet tooth with a nice cooling treat. This desert is my favorite and you can have it as a healthy snack too. It's low in carbs, rich in protein and made of only clean ingredients. Have you ever had carob? It is a nice alternative to chocolate for some as it is caffeine-free and contains antioxidants as well as calcium, iron, potassium, and fiber.

Carob or locust tree, native to the Mediterranean region is a resilient tree resistant to harsh climate and drought. Both, in the Talmud and Bible, it is mentioned numerous times as a St. John's Bread. And it is traditionally eaten for the Jewish holiday of Tu Bishvat and Muslims drink Carob juice known as Kharoub during Ramadan to prevent dehydration.

Interestingly the term "carat" alludes to the practice of weighing gold and gemstones against the seeds of the carob tree by people in the ancient Middle East.

Now to the recipe :)

It is Vegan, gluten-free, raw, refined sugar-free, and soy-free

Ready in 20 minutes, these carob summer balls taste decadent thanks to carob's natural rich sweet flavor. The coconut oil is helps solidify the fudge when chilled. It melts quickly so enjoy your treat straight from the freezer.

  • 1/2 cup virgin coconut oil, melted

  • 1/4 cup creamy or crunchy natural almond butter

  • 1/4 cup carob powder

  • 2-3 tablespoons pure maple syrup (optional)

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon fine grain sea salt or Himalayan salt

  • 1/2 cup coconut chips (to add cooling summer crunch - optional)

  1. Line a very small loaf pan (4" x 8") with parchment paper

  2. Mix all ingredients together in a large bowl until smooth.

  3. With a spoon, scoop the mixture and form it into the small balls.

  4. Freeze for about 30 minutes.

  5. Enjoy! Store leftovers in a container in the freezer.
