Summer Coconut & Almond Cookies
I fall in love with these sweet and deliciously soft cookies and I hope you will too :) Everyone likes cookies but the regular ones are high in carbs, flour, gluten and unhealthy fats. So get ready for this quick and easy low-carb, gluten-free, sugar-free, dairy-free, paleo and keto coconut almond flour recipe. These healthy treats make a perfect company to enjoy with a cup of coffee/tea, post-work-out snack, office energy power bite or snack for children's school lunch box. And they are made in 25 minutes in total so no excuses. This is a win-win!

1 cup coconut milk
1/2 cup coconut flour
1/2 cup almond flour
1 large egg
2 tsp vanilla (optional)
2 tsp raw cacao or carob (optional)
Preheat oven to 350 degrees Fahrenheit and line a cookie sheet with parchment paper.
Combine the flours and coconut milk until you get fluffy consistence.
Add all the other ingredients and mix well until combined and the mixture begins to thicken.
Squeeze a small handful into a ball, then press into a cookie shape with your fingers or spatula.
Place the cookies on a lined baking tray and bake for 15-20 minutes.
Allow to cool for a while, then remove and place on a baking rack to cool down.
